This looks just like fried chicken strips doesn't it? Well it was fried, but in the OVEN using Olive Oil. I am normally not a fan of baked chicken. It never seems to get crispy, the breading is mushy, and always sticks to the bottom of the pan. YUCK! I was a little worried that this was going to happen, espcially when I flipped the strips and they were not crispy at all. To my surprise, I was wrong and these ended up crispy on the outside and juicy on the inside. There are no exact measurements for this recipe except for the amount of oil, use your best judgement depending on how much chicken you are going to make. Also you can season the breading however you choose. This is what I used....
You will need:
Chicken Tenders
Flour
Garlic Powder
Pepper
Beaten Eggs
Breadcrumbs (I used Panko)
Paprika
1/2 Cup Olive Oil
Preheat oven to 350
Pour Olive Oil into a baking dish
Combine the flour, garlic powder, and pepper in one bowl
Beat the eggs in a second bowl
Pour the breadcrumbs in a third bowl
Dredge the chicken in the flour, then the egg, then the breadcrumbs
Lay flat in baking dish
Sprinkle with paprika
Once all the chicken has been breaded bake for 1/2 hour
Take chicken out and flip
Bake for an additional 1/2 hour or until juices run clear
Drain on paper towels
Enjoy!
